British mum Amy Fenton has shared her easy corned beef chowder dinner recipe with just four ingredients, which she claims can feed a family of four for £2.5.
This recipe contains only four main ingredients: potatoes, onions, beef and carrots. Amy said many of the recipes were too long and some ingredients were too expensive. According to the recipe, her costs are as follows: 4 potatoes 20p, 1 brown onion 10p, 1 tin of corned beef £1.79, 3 carrots 15p.
Amy recalls as a child that as soon as she got home from school, she could eat a meal prepared by her mother, and it was this corned beef chowder. At that time, she did not understand the nutrients in it, and it was not until she became a mother that she realized that this dish is very suitable for children to eat.
Amy says: “It can get really frustrating when most of it ends up on the floor or in a bib. This staple is veggie-y, soft in the mouth, quick to make and works for me as well as Perfect for my toddler."
Amy sees this staple as "the perfect and hearty warm dish on a cold winter's day" and shares how to make corned beef chowder: Start by peeling and dicing potatoes Boil in salted water for 15 minutes, then add carrots; then, sauté chopped onions on a frying pan over low heat; finally, add potatoes, carrots, onions and seasoning to the diced corned beef Mix well. Amy says parents are looking for ways to get more food for less because of the cost of living crisis. Corned beef chowder is easy to make and serves dinner for four for around £2.50.
